Mix all the ingredients, except the honey, together in a bowl. Leave some roasted almonds and cherries for later.

Press into a baking dish covered with parchment paper.
Top with the extra nuts and dried cherries.
Drizzle the honey on top.
Refrigerate overnight, or freeze for a couple hours, depending on the desired texture.
When ready take out of the fridge or freezer, and cut into 8 pieces with a big knife.
I suggest storing them into individually wrapped portions, especially if you plan to freeze them. I used parchment paper to wrap mine.
