  1. Boil the water for the pasta.
  2. Chop the sun dried tomatoes.
  3. Chop the onion.
  4. Add to a bowl and set aside.
  5. Cook the pasta and save some water.
  6. Drain and add with a little water to the bowl with the chopped vegetables.
  7. Add the pistachio pesto and drizzle some EVOO.
  8. Add some grated parmesan, mix and serve.
  9. Top with the ricotta cheese and enjoy.
