Italian Olive Oil Biscuits with pine nuts

Today, we are baking these scrumptious Italian olive oil biscuits with pine nuts. Said alone, it already makes your mouth water, doesn’t it?

Well, wait until you taste them. Who said only chocolate cookies are addicting?

What to expect: a crispy on the outside, soft and crumbly on the inside savoury biscuit that oozes with extra virgin olive oil flavour. It also has a nice delicate touch of parmesan cheese, aromatic rosemary, and indulgent pine nuts.

Italian Olive Oil Biscuits with pine nuts

Try this mouth watering Italian biscuits with extra virgin olive oil and pine nuts, also easy peasy to make.

Equipment

  • 2 medium large bowls
  • 1 baking spatula
  • 1 grater
  • 2 tablespoons
  • 1 fork
  • 1 Rolling Pin
  • 1 baking dish
  • optional baking paper

Ingredients

  • 1 sachet lievito Paneangeli for bread, pizza and focaccia or 2 teaspoons baking powder
  • 200 gr flour 00
  • 20 gr pine nuts
  • 50 gr parmesan or pecorino cheese grated
  • salt and pepper
  • rosemary - dry or fresh
  • 1 medium egg
  • 80 ml Belmorso Extra Virgin Olive Oil

Instructions

  • Add dry ingredients to a bowl, including the seasoning, and mix well.
  • Slowly add the extra virgin olive oil into the dry mixture, and mix well.
  • Then, beat the egg and add that too. Mix again until a dough ball forms.
  • You can let it rest or proceed immediately.
  • Try to roll the dough into a square shape, about 3 cm thick, if you want fingers style biscuits; otherwise, you can use a cookie cutter. You can also shape into balls and press with your finger each one.
  • Cut the square into 9 biscuits or 12 or shape them into balls like I did.
  • Layer on your baking dish, covered with baking paper or greased with EVOO.
  • Bake in a pre-heated oven for 15 minutes at 170 degrees Celsius.

Of course, you can simply munch on them alone, but if you are looking to serve them for a get together, this is the selection I suggest pairing them with:
