Pistachio Pesto Ricotta Pasta Salad
Ingredients
- 350 gr Elicoidali Tube Pasta
- 200 gr fresh ricotta
- 8 Belmorso Sun Dried Tomatoes
- half jar Belmorso Sicilian 60% Pistachio Pesto
- half small onion
- grated parmesan cheese
- Belmorso Extra Virgin Olive Oil 1 lt
Instructions
- Boil the water for the pasta.
- Chop the sun dried tomatoes.
- Chop the onion.
- Add to a bowl and set aside.
- Cook the pasta and save some water.
- Drain and add with a little water to the bowl with the chopped vegetables.
- Add the pistachio pesto and drizzle some EVOO.
- Add some grated parmesan, mix and serve.
- Top with the ricotta cheese and enjoy.
