Italian Broccoli Salad
Bored of the usual Ceasar or Caprese salads. Today, we will show you a new delicious one to add to your salad repertoire. Plus, you will find a few more suggestions at the end of the post.
Do you like broccoli? If so, how do you eat them?
Did you know that Italians, especially Sicilians love a good old broccoli salad, especially during the Summer.
If you are not fond of broccoli, but you can tolerate them, I urge you to give this one a try. What you can do is reduce the broccoli to other ingredients ratio. Or you can learn to love them because they are really good for you!
Before we start, let me remind you that you will need a high quality Italian Extra Virgin Olive Oil like Belmorso EVOO to make a truly delicious broccoli salad.
Italian Broccoli Salad Recipe
1 small broccoli
2 garlic cloves
1 tuna or two
a handful of black olives
half a handful of pine nuts
2 boiled eggs
optional 1/4 onion
goat cheese – fresh or aged; we are using cured goat cheese which is salted.
1 ciabatta bread
salt and pepper
Belmorso EVOO
Wash, cut and boil the broccoli florets for 20 mins. You can also steam them.
Boil the eggs in a separate pot.
In the meantime, chop your ciabatta bread into crouton size bites. Add them to a dish covered with baking paper, season with salt and pepper, drizzle with EVOO, and either bake in the oven for a few minutes or toast in a pan.
Once the broccoli have cooked, it’s ideal to let them cool a little.
As soo as they have cooled, you can assemble your salad in a large bowl.
Add the broccoli florets.
Add the garlic cloves minced.
Add the onion sliced thinly, if you like raw onion.
Add the rest of the ingredients – tuna, boiled eggs, and black olives.
Add the optional pine nuts – recommended.
Add the goat cheese into large chunks, or grate it if you prefer.
Season and drizzle with EVOO. Mix well.
Add the toasted croutons.
Your Italian broccoli salad is ready to enjoy on its own, or a side dish. This makes a great one to serve with a grilled fish. Or you can remove the tuna, and serve it with chicken or beef.
