Pistachio Pesto Potato Salad Recipe

Ingredients
- 4 large potatoes
- 1 large can tuna
- 1/4 of an onion
- 1 boiled egg
- optional black olives
- Belmorso Pistachio Pesto
- Belmorso EVOO
How to make it
- Cut and boil the potatoes. Boil the egg too.
- Chop the onions, and mix with the tuna and the olives in a bowl.
- Once the potatoes and eggs have cooked, add those too into the same bowl.
- Season with salt and pepper.
- Drizzle the extra virgin olive oil.
- Add the pistachio pesto, as much as you like – starting with 2 tablespoons.
- Mix and enjoy
