  1. Mix the beef cubes and Belmorso pistachio pesto in a bowl, and leave to marinate for an hour. You can simply add a few tablespoons of the pesto, one to two tablespoons evoo, and your seasoning.
  2. Wash the vegetables.
  3. Chop the onions and pepper into large chunks.
  4. Leave the baby potatoes and cherry tomatoes whole.
  5. Assemble the skewers by alternating pieces of marinated beef, with the vegetables.
  6. Bake, grill, or BBQ for 30 minutes or so.
  7. You can brush more pistachio pesto on top as you cook them, or before serving.
