Everyone is cooking orzo lately! If you want to make it the Italian way, try this simple vegetarian recipe with few high quality ingredients that pack a lot of flavour.
Ingredients
- 300 gr dry barley/orzo
- 2 cans peas or fresh or frozen
- 2 handfuls spinach leaves
- 2 garlic cloves
- grated parmesan cheese
- Belmorso EVOO
- 1.2 litre water
- vegetable stock
- parsley
- salt and pepper
How to make it
- Mince the garlic and sauté with the peas in a little extra virgin olive oil.
- Mash the peas, just slightly.
- Next, add the dry barley and leave to toast for 5 minutes, mixing all the time.
- In the meantime, prepare the stock with 1.2 l of water.
- Add the stock to the pot, mix and leave to simmer for 20 minutes.
- After that time, add the spinach, mix and season.
- Take off the heat, add 3 tablespoons oil, and the parmesan, and mix well.
- Serve with fresh parsley on top or mixed in.
