It’s been a while since we brought you a pizza recipe. This one is great for the holidays, or when you are entertaining. It’s very easy to put together, and you can keep the rolls in the fridge while you get yourself and your house ready. Then bake them when your guests are about to arrive and serve them with your antipasti platter.

The inspiration for these pizza rolls comes from the Neapolitan pagnuttielli, a traditional street food sold by bakery apprentices known as “pagnuttellari” in the past. These round loaves, made with leftover bread dough and filled with ingredients like lard, salami, pecorino cheese, and pork cracklings, were a popular snack delivered to workers in the city from neighborhood bakeries.
While the tradition of selling pagnuttielli from carts by these apprentices may no longer exist, the spirit of this unique dish lives on in a few bakeries in Naples. The evolution of this street food classic into the famous Neapolitan sandwich, available in bakeries throughout the city, highlights the culinary heritage and creativity of Naples. The pizza rolls you are making today pay homage to this rich history and the delicious flavors of the traditional pagnuttielli.
