Spring Pasta With Asparagus

This recipe is for all of those people who love asparagus, and it comes at the best possible time. It’s currently asparagus season in Ireland, so now is the time to order a pack of trofie, buy some good locally grown asparagus (or even better use your own produce, if you happen to grow it in your garden), and try this simple and delicious Spring pasta recipe.

Easy Asparagus Pasta Recipe

How to make it

  1. We started by boiling our wild asparagus to remove some of that bitterness it has. You don’t have to do that when using the regular type.
  2. You can chop them into your favorite size. Feel free to chop them small or just cut the ends and then in half.
  3. Next, slice an onion.
  4. Take a medium sized pan and stir fry both the asparagus and the onion in extra virgin olive oil.
  5. Add the bacon and leave them too cook until translucent but still fragrant.
  6. If you prefer your bacon to stay crispy, the best is to cook it in a separate pan on its own.
  7. Boil the water for your pasta, and cook it following our trofie packaging instructions.
  8. Drain it, reserving some water.
  9. Mix the pasta with the asparagus and onions, add a little water and serve it.
  10. Top with grated parmesan and a crack of black pepper.
