Wholemeal Strozzapreti brings the personality of one of Emilia-Romagna’s most iconic pasta shapes together with the depth of wholegrain durum wheat. The name means “strangled priest” — a piece of culinary history that reflects the independence of the Romagna people during centuries of Papal rule.
The twisted shape creates perfect channels for thick sauces, making it one of the best pasta shapes for a slow-cooked meat ragù. The wholemeal version adds a nutty, earthy quality that makes the whole dish feel more substantial and satisfying. Don’t be put off by the wholemeal — it’s a flavour enhancer here.
