Creamed Apple Carrot Lemon Soup
Every year I like to come up with at least a new soup, you can call it my healthy pleasure :). This year’s first one is inspired by my favourite juice – carrots, apple, lemon and a dash of cinnamon; it’s also one of the simplest soups I have ever made. It includes just 4 main ingredients plus some EVOO, and it turned out super flavourful and comforting.
Let me share this simple recipe with you. It’s great if you are watching your calories, as it only has 300 calories per portion.
Apple Carrot Ginger Sour Recipe
Ingredients
- 8 carrots
- 2 red apples
- half a small onion
- 1 potato
- Belmorso EVOO
- salt and pepper
- optional ginger
- juice of one lemon
- 1 cube vegetable stock
- optional yogurt for garnishing
- optional cheese toastie for serving

How to Make it
- Peel and cut the carrots into small pieces.
- Do the same with the apples, the potato, and the onion.
- Sauté all of them in a little bit of EVOO.
- Melt your vegetable stock in some water.
- You can add a small piece of ginger to your pot or use half a teaspoon powdered ginger.
- Cover the vegetables with enough vegetable stock.
- Leave to simmer with the lid on and the heat low for 30 minutes.
- Take off the heat, add the lemon juice, and blend.
- Serve with a drizzle of evoo.
- You can garnish the soup with a drizzle of white yogurt, and serve with a cheese toastie.
