Orecchiette Pasta

Orecchiette are one of Italy’s most distinctive pasta shapes — small, slightly domed discs shaped by hand to resemble little ears (orecchio means ear in Italian). They come from Puglia, the sun-drenched heel of Italy’s boot, and carry all the warmth of that region in every bite.

The genius of their shape is the texture it creates: soft and silky in the thin centre, pleasantly chewy around the thicker rim. Sauces nestle into the concave surface and cling beautifully — making every forkful deeply flavourful.

Cooking Instructions

Bring a large saucepan of salted water to the boil, add the pasta and cook for 12–15 minutes. Drain and dress with your favourite sauce.
