Spaghetti con Curva — spaghetti with a curve — is a Southern Italian pasta with a U-shaped bend in the middle that makes it instantly recognisable. This shape originated in the south of Italy and is closely associated with the Gragnano tradition, where artisan pasta-making has been a way of life for centuries.
The curve isn’t just visual: it means the pasta dries differently, giving it a denser structure that stays al dente longer during cooking and holds its texture better once sauced. The rough bronze-die surface ensures sauces cling rather than slide off.
